Most values can be changed. Open a game's House Rules before it starts — you can turn contracts off, change what each one is worth, set the bonus and pick the target score.
Open the menu on the score board and choose Undo Last Round. The round history in the same menu shows exactly what was entered for every round.
On your phone, and nowhere else. The app has no accounts and no connection. Deleting the app deletes every saved game with it, and they cannot be recovered.
Yes. Games you have not finished are listed under In Progress, and picking one up carries on from where the score stopped.
